Ours is a young and Tuscan staff who expresses with passion the love for our land. In an intimate and welcoming environment, we invite you to spend an evening or a lunch tasting the most typical Tuscan flavours revisited with a new style but still respecting the tradition.

The stone surrounding us reminds us the past, the tradition. Meanwhile the panorama in front of us is a gaze to our landscape and also to our future.

The Osteria Fornelli, is a place where you can enjoy the flow of time, you can enjoy every instant, every smell/fragrance and every flavour. Each course is created by us with care and passion. We love slow cooking techniques, as the marinade and the vacuum sealed cooking and the low temperatures cooking.

This reflects our approach to the traditional cuisine: respect for the raw material and extreme care in treating it, with the goal of enhancing the flavours. But also, passion for telling our cuisine and our tradition. Our staff, thoughtful and prepared, is always ready to welcome you.

We are located in Piazza Fornelli, in the most panoramic spot in Volterra, one of the most beautiful in all Tuscany. From here you can see everything: in the most beautiful days you can even see Elba island and Corsica. From here, between a glass of wine and a typical dish, you can admire the landscape that inspires us every day in our work.

If you want to organize a party to celebrate a first communion, baptism, birthday, graduation or wedding, Osteria Fornelli can become yours for a day!

Two young Tuscan entrepreneurs who strongly believe in their land, in creativity and in passion for work. They saw in the Osteria Fornelli the ideal place where to combine their paths: a place that has a magical location, which looks at the Tuscan region but has its heart in the city of Volterra. The Osteria Fornelli was born from the encounter of tradition and innovation.

Executive Chef

He is a creative director, because he does not simply “cook” excellent dished, but he is able to create new dishes based on the seasonal ingredients that Tuscany offers. Dishes that are able to enhance colours, flavours, crispiness and combinations, sometimes traditional and sometimes unpredictable which give to the Osteria Fornelli cuisine that extra kick.

He is honouring the restaurant name with his excellent preparation and coordination. He is very careful about every detail, precise and elegant in the explanations of the dishes and expert at introducing the menu in a harmonic way, creating synergy with the client that will perceive the attention and the preparation that is behind the Osteria Fornelli, even before tasting a course.

Always smiling, she takes care of bringing and presenting with passion all the dishes so to generate within the customers the curiosity of tasting the dish as soon as possible. She is prepared in giving answers on what is served and to be careful to the customer’s satisfaction so to make the lunch or dinner a real Tuscan experience.

VALENTINA FUSHA
Sous Chef

Defined as Davide’s right-hand; she is working closely with him, experimenting new dishes and combinations, but most of all she is taking care of the processings that at the Osteria Fornelli are not put aside; slow marinating, double cooking, steam cooking, home-made pasta and bread that are remarkable.

OMAR HARIRI
Plongeur

He deals with keeping the kitchen as clean and tidy as possible, supporting with great enthusiasm the chefs in the usage of ingredients and utensils, because as great chefs teach us, it is impossible to cook well without order.
